A Good Way To Start The Day
Hope you have all had a lovely weekend. I’ve been having a fibro flare up mainly due to the stress the car situation caused me. But I now have it back so not so isolated any more thank goodness.
Anyway enough of that, today’s blog post is a keto diet breakfast egg muffin recipe. But to be honest you could have these anytime of the day. They are great for lunch, or after the gym or warm with salad at night. Delicious hot or cold and keep in the fridge for up to 5 days. So they are a great thing to make and you could also pop them into your child’s lunchbox.

Keto Diet Breakfast Egg Muffin Recipe
Keto Diet Breakfast Egg Muffin Recipe - Ideal for breakfast, lunch, or with salad for dinner. Perfect snacks for after a gym session or a child's lunchbox.
Ingredients
- 1 Chopped Onion
- 6 Chopped Mushrooms
- 1/2 Chopped Red Pepper
- Sml handfull Chopped Cherry Tomatoes de-seeded
- 4 Eggs medium beaten
- t tbsp Cheese to taste
- 1 pkt Dry Cured Streaky Bacon
- 1 pinch Salt
- 1 pinch Freshly Ground Black Pepper
- Chopped Fresh Parsley to taste (or dried mixed herbs)
- 1 tbsp Butter
- splash Milk full fat
Instructions

Fry the chopped onion, red pepper in some melted butter.

Add the chopped mushrooms, parsley and tomatoes and fry until it has all softened.

Pour this mixture into a glass bowl or jug.

Add the salt and pepper and mix through.

When the mixture has cooled down add to it the 4 beaten eggs and the grated cheese and mix thoroughly.

Grease a muffin tin with butter and then line it with the strips of bacon. I find that one strip circles each muffin hole and then I chop one up and use that to cover the bottom.

Now spoon into muffin tin the egg mixture and pop into the oven on a medium heat for 30 minutes.

Remove tin from the oven and let them cool slightly before removing them.
I hope you enjoy these as much as I do. These are great to make up as a batch on a Sunday and keep in the fridge for the following week.

Oh God! They look delicious. I will try those. A Question. I have been on this diet for a few months now and am getting down to 16 stone, which will make 2 stone I have lost. Is it important to take supplements on this diet? If so what? Thanks! Gill x
Wow that’s a good loss Gill. The products contain all the vitamins and minerals you need. I take omega oil capsules, vitamin d now summer is over, tbsp mct oil in first coffee of the day and when I remember collagen powder in my first shake. No one told me to do this however. It’s something I chose to do xx
