You have to love Jamie Olivers Meatballs – homemade comfort food and easy for a Saturday night. You can also transform this into a keto friendly recipe by replacing the bread roll with a keto bread recipe or buttered courgetti.
Jamie Olivers Meatballs
- 1 packet Mozzarella
- 4 tsp Pesto
- 500 g minced beef
- 1 can plum tomatoes
- seasoning to taste
- cup of water for your hands
- oil small amount
- 4 bread rolls
- 1 chopped chilli seeds removed optional
Put a little bit of oil in the frying pan and put it on medium/high to heat up
Empty the beef mince onto a clean surface.
On top of the beef put four teaspoons of pesto and the seasoning
Using your hands mush it all together. Wet your hands with the water and form meatballs
Place each meatball into the frying pan
Brown the meatballs turning regularly. When the meatballs are brown enough empty the can of plum tomatoes into your hand and squish together into the frying pan. (Don’t forget to wash your hands).
Make a cut in the mozzarella bag and pour the liquid into the tomato tin and then pour this liquid into the frying pan. Take the mozzarella and slice it all.
Place a slice on top of each meatball then cover with a lid until the cheese melts around the top of the meatballs.
Meantime slice the bread rolls, toast if you wish, then spread some pesto on the bottom of the roll before placing three of the meatballs on top.
Put the bun top on top of the meatballs.
Scoop some of the tomato sauce into the dish so you can dip your meatball bun into it.
I have to be honest though for me there were a little bit too bland and I much preffered them with the chilli you could always use tabasco sauce if you had no chillies. Dried chilli seeds can also add a punch or crushed fennel seeds are also nice.
Give it a go and see how you get on.
I have also put together a slideshow of the recipe with an audio on Youtube. If you wish to view it please click here.
I hope you all have a lovely weekend and will catch you soon.
All my love
